The head restaurant situated in Laguiole, France inherits the unique gastronomic philosophy and world view of genius chef Michel Bras. As the first branch ever to be established, Michel Bras TOYA Japon opened its doors in Toya, Hokkaido, Japan in 2002.

On the plate, brilliant colors, aromas, tastes, flowing movement, and sensory elegance of the famed specialty “gargouillou” turned the tide of French cuisine in the world. Vegetables, herbs, and seeds fundamental to Michel Bras are beautifully presented in this signature dish.

Another specialty ‘coulant’, which means ‘flowing’ or ‘streaming’ was invented by Michel Bras in 1981. Put a knife to the biscuit and out flows the warm chocolate filling. This dessert whose contrast of warm and cold, texture, and flavor of chocolate become one on the plate, spread throughout the world and is said to evoke supreme bliss when taken with wine from the Bras selection.

Simone Cantafio

Born in Milan, Italy, Cantafio completed studies in Carlo Porta school for culinary arts and hotel management in Milan and afterwards developed a steady career in world renowned restaurants in Italy, France, Australia, and England.
Being a part of Bras was a lifelong dream which came true when he started working at the Bras Laguiole restaurant in 2010 for 4 years, following his experiences at Gualtiero Marchesi – the first restaurant in Italy to earn 3 Michelin stars, 3 Michelin star Georges Blanc in the Beaujolais region of France, and more.

Under the guidance of the Bras family, Cantafio scrupulously learned and absorbed the soul of Bras gastronomy – the philosophy of the genius chef whose style was inspired by the nature of Aubrac – at the core of which lies the spectacular land of Laguiole, passion for local ingredients, and exquisite restaurant hall.

Michel Bras is also known to place great importance on partnering with producers of the local land. This distinction comes from Michel Bras’s philosophy in which rich ingredients and Bras gastronomy converge, establishing the restaurant as a representation of the land. This philosophy lives on in Hokkaido as it is succeeded by Michel Bras TOYA Japon.
