Greetings from the Michel Bras TOYA Japon Chef/Director

Dear guests,
 
To start with, I would like to thank Kuboyama-san and Sakamoto-san for the opportunity to work at the Windsor Hotel Toya Japan. The opportunity that the Bras family honored me with as the Chef/Director of the Michel Bras restaurant Toya in Japan, is a privileged one and not only to be working for Michel Bras, but also to be working with one of the most prominent and reputable Hotels in Japan at "The Windsor Hotel Toya". Since the arrival of my wife Alice and I in Toya, in the beginning of November 2011, we have been captivated by the beautiful scenery from the Windsor Hotel. We can truly say that Michel Bras Toya Japan is situated in the same environment as the main Restaurant of Michel Bras Laguiole in France. The similarities do extend also to the dishes that are served to our distinguished guests. We make sure that the guests get the same menu and service as at Michel Bras Laguiole France.
 
Having more than 12 years of culinary experience in different French fine dining restaurants like the "Maison Pic" in Valence a 3 Michelin star Restaurant, with Michel Portos at « The Saint James » a 2 Michelin star Restaurant just to mention a few. My best culinary experience and souvenir was with the Bras restaurant for 4 years from 2003- 2006. The Family is simply amazing, at what they do. I learnt perfect balance between the rigor of work and human relationship when I worked with them and of course different cuisine techniques.

Thereafter I spent 3 years in Asia- Malaysia and Singapore working as the French Ambassador's chef and in French fine dining Restaurants. The return to Asia with my wife at The Windsor Hotel is a great pleasure, when this opportunity was extended to me by Michel Bras of working as a Chef/ Director at Michel Bras Toya Japon. I together with my well trained Kitchen and Service team look forward to making you discover the Michel Bras Toya Japon menu with new recipes from Laguiole.
